Rhubarb is a very old plant and medicinal use dates back to 2700 BC in China. As a food product rhubarb has been consumed in Europe since 1778 and 1800 in North America. It is such a hardy plant that “you can plant it in a field, come back 20 years later, and it will be thriving!” Rhubarb is rich in vitamin C, dietary fiber and calcium; it is also a source of potassium.
